This is a recipe I got from somewhere online, but I’ve adapted it to my own preferences and general lack of willingness to measure ingredients, so now it’s mine. I make it a bit less than once a week, whenever we have black bean burritos. This is a very simple, minimalist guacamole, I think. If you’re quick at chopping vegetables, it only takes about 5-10 minutes to make.
Ingredients
- 1 small sweet onion (Vidalia or Palmetto Sweet), minced.
- 1 small bunch cilantro, stems chopped off and the rest finely chopped
- Juice of 2 small limes.
- 1/2 tsp salt
- 4 ripe Haas avocados
Instructions
Put the first four ingredients in a mixing bowl. Halve and scoop out the avocados and put them in the bowl, then mash them with a fork. It’s fine, and in my opinion, preferable, to leave some lumps of avocado rather than making it completely homogeneous. Mix everything together, and it’s done.
